Mike Zappa
Mike Zappa is a Clinical Research and Outreach Coordinator at The Hormel Institute, University of Minnesota, in Austin MN. He graduated from St. Cloud State University in 2019 with a B.S. in Biomedical Science. Before joining the University of Minnesota in March of 2023, Mike worked on cancer research studies in the Cancer Center at Mayo Clinic-Rochester for 3 years.

Emily Heath
Emily Heath is The Community Research and Outreach Nurse for The Hormel Institute - University of Minnesota. Emily is a graduate of Minnesota State University with a BSN, and Luther College with a BA in Biology. Emily has been working at The Hormel Institute in Austin, MN since 2021 when they first started clinical studies. She and her team have helped implement studies from the Tobacco Research Programs at The Hormel Institute to increase participation from people in more rural areas of the state.
